Savory French Brioche

Organic spinach wilted in Straus butter with chopped yellow onions, seasoned with sea salt and pepper takes on a tangy taste when Chef Guy adds his specialty pesto made from all organic garlic, tender basil leaves, sprigs of curly parsley, emerald-colored watercress, and green onion. Guy's original pesto recipe contains no pine nuts or parmesan cheese. Northern California cow's milk feta contains a dash of salt which also enhances the delicate flavor of the spinach. Round out your meal with a colorful mixed greens salad, a slice of whole grain bread and a glass of your favorite wine.

Organic Spinach Gorgonzola Brioche, 6 oz Increase Quantity Decrease Quantity    
Fresh, organic Santa Cruz spinach leaves are melted in Straus organic butter along with chopped yellow onions and season with mineral-rich sea salt and ground black pepper. Chef Guy prepares a velvety Bechamel sauce using organic Straus butter and whole Straus milk, organic, white unbleached wheat flour and grated nutmeg. The Bechamel gives a smoothness which subdues the spiciness of the imported organic Italian Gorgonzola. Order mesclun salad and your favorite bread and wine to complete the meal.

Organic Carmelized Onion Brioche, 6 oz Increase Quantity Decrease Quantity    
The sweetness of the organic yellow onion and delicate red onion melt together during the caramelization cooking process. Chef Guy sprinkles natural turbinado sugar and droplets of rich, sweet, imported balsamic red-wine vinegar, sea salt and ground pepper into the sauteed onions. Nutty organic Tarentaise cheese comes from Thistle Hill Dairy in Vermont and is an aged alpine raw milk cheese from grass-fed Jersey cows. The result is a sweet brioche which can be eaten by itself - it also complements pork or roast beef.

California-grown Miss Livingston sweet potatoes are steamed in a large saucepan, and then peeled. Organic yellow and green onion, sprinkled with grated nutmeg, cook slowly in organic Straus butter, and Cowgirl Creamery creme fraiche adds a smooth velvety texture and taste. The sweet potatoes balances the sourness of dry, red currants. The delicate dough contains organic, white unbleached wheat flour, fromage blanc, Straus butter and sea salt. Frozen.

Organic Chicken in Brioche Pastry
Free-range organic chicken is first poached in a rich stock, using both white and dark meat. The chicken is then folded with cooked spinach or mushrooms into a Béchamel sauce with domestic Sherry, sea salt and cracked black pepper, and finally hand-formed into Chef Guy's signature brioche pastry.
Each hand-made chicken pie contains 7 to 8 ounces of satisfying filling. Single serving. Frozen.
