
Dave's Gourmet Albacore
Dave Greenberger
grew up in the Northwest on fishing boats, and as a small child he played
in the fish holes of boats, when most children played at home in a typical
playpen. Dave began fishing at the age of eleven and by the time he
was twenty two, he owned his own boat, and was making a living fishing
fulltime on the North Pacific Ocean.
Unlike Coastal local boats, Dave fishes solo 30-60 days out on the high
seas with other world trade fishing boats. He braves the high seas on
his fishing vessels to fish anywhere 1,000 miles off the coast. It is
sad to say that there are only a few American fishing boats left that
hook and line fish and Dave is one of the remaining few hook and line
commercial Albacore fishermen of this dying trade.
Today Dave has made his home near Diamond Organics in the port of Santa
Cruz, California where he lives during the off season. It is also here
in Santa Cruz that his boat Jeanette resides in the mellow waters of
the Monterey Bay. Although tuna seasons end, work for Dave never ceases,
because to keep the Jeanette in ship shape condition is a continuous
full time job. Despite all the hard work, this is Dave's way of life,
and his pride and success show in the quality of his product.

Line Catching
vs. Netting: Dave's Albacore is hand caught by
hook and line; no nets are ever used in the catching
process. Unfortunately nets kill many birds, dolphins and many other
animals that get trapped in them. The other disadvantage of net fishing
is that the fish being caught will lie trapped and dead for an uncertain
period of time, without being processed or iced to a cool temperature.
This is bad for the meat and therefore bad for the consumer who eventually
eats them.
Bleeding vs. Not Bleeding fish: After Dave's fish are line
caught, they are instantly pulled out of the water and then
cut to bleed out. Fish that are net caught are not bled at all. The
advantage to bleeding the fish immediately after the catch is that their
hearts are still pumping and blood from the fish is removed. Any blood
left in a caught fish will acidify and can cause the
meat to sour and spoil.
Refrigeration and Storage: After the fish have been bled, they
are then placed carefully into the finest of refrigeration systems.
The key to having a fish taste fresh is to lower the
temperature of the fish as fast as possible to a coldness way below
zero. The fish are then stored in the fish hole where they are closely
monitored and held until the Jeanette arrives to port.
From Port to Cannery: When the Jeanette finally arrives to port,
the fish are carefully unloaded, and taken to the custom cannery where
all the fish are hand filleted and packed into
cans. This canning process is close to home pride canning
and is nothing like the mass production of factory process canning that
can be found in most major grocery stores. Care and Quality stands behind
