Pierce Pt, Cowgirl Creamery's Fall/Winter seasonal cheese, is made from organic whole milk from the Straus Family dairy. Pierce Pt is washed in a muscato wine and rolled in dried herbs from the Tomales Bay coastal region. The result is a delicious cheese, semi-firm yet creamy, complex yet never overpowering, that you'll recall longingly when it's out-of-season. Pierce Pt received a 1st Place award at the 2006 American Cheese Society Conference.
Made from pasteurized cow's milk with vegetarian and microbial rennet; 11 oz round.

Colston Bassett Stilton, 4 oz Out of Season
From cheesemaker Richard Rowlett at Colston Bassett and District Dairy in Nottinghamshire, this outstanding cheese is one of England's creamiest and most succulent Stiltons. It is aged for about 4 months and develops a moist, firm, crumbly texture and mellow, deep and syrupy flavor.
Colston Bassett Stilton has a velvet, close texture with a pale ivory paste, grading to amber at the edges and marbled with greenish blue veins. The rind is dry and crusty, grey-brown in colour, slightly wrinkled and with white powdery patches. The flavour ranges from mild with a sharp edge when young, to rich and tangy when mature.
Made from pasteurized cow's milk. Pairings: Madeira, Port, Sherry.

The most famous of the Greek-style cheeses, Feta is salty and sharp. Made originally with ewe's milk or a mixture of ewe's and goat's milk, a fine Feta can also be made with cow's milk. Drained curd is salted, washed and placed in brine, where it is ripened for 15-30 days. The hard crumbly version of Feta common in supermarkets is aged for up to 8 months.
