This sea salt comes from the Baja coast of Mexico and, because it's solar dried, retains its natural balance of trace minerals.
Harvested in a particularly clean, unpolluted area of north and south water movement. The grinding process it goes through is done by hand on stones with spiral grooves in them, which retains the chi compared to the hammermill process which destroys/dissipates it. It's white, unprocessed and has some moisture in it.

The strongly aromatic, sweet-tasting, dried inner bark of a tree in the laurel family, cinnamon is one of humanity's oldest spices. Its recorded use in China and Egypt date back to 2500 BC; it was one of the first spices traded in the Mediterranean area. Several cinnamon varieties exist in China, Indonesia, and Vietnam. In many European languages, the name for cinnamon comes from the Latin canella, which means "small tube, pipe." This refers to how thin strips if the inner bark of the cinnamon tree are sun dried to form tightly curled quills.

Health Benefits: Sweet and pungent, pleasant tasting and warming, cinnamon supports the spleen-pancreas, stomach, bladder, kidney, and liver meridians. It is one of the most commonly used warming Oriental herbs and has stimulant, analgesic, and astringent properties. Organic cinnamon can increase digestive fluid secretion and therefore ameliorate intestinal gas. It raises vitality and stimulates all the vital functions of the body, counteracting congestion and aiding the peripheral circulation of the blood. It is useful for treating diarrhea, nausea and vomiting, influenza, arthritis, menstrual cramps, rheumatism, and candidiasis. Its aroma relieves tension and helps steady the nerves. Cinnamon is not recommended for pregnant women.

Use: In Western cuisine, cinnamon is commonly used in desserts. But considering that cinnamon aids absorption of nutrients, you might start using it more liberally. Elsewhere in the world, it is a common ingredient in savory dishes. My favorite way to use a cinnamon quill is to sauté it, along with any other spices, in warm oil until the quill unrolls, then add and cook the remaining ingredients. When using ground cinnamon, add is shortly before serving; it becomes bitter with prolonged cooking.
