Our reputation for beautiful organic vegetables (and organic fruit) has made
us a favorite of professional food photographers across the country. And their
beauty is not just skin deep! Our organic vegetables have a depth of flavor
that is simply not found in store-bought varieties because our local organic
vegetable farmers rush their freshly cut varieties to us just prior to our overnight
shipments to you. You just can't find fresher vegetables unless they're
in your own back yard.
The vegetable realm includes any edible part of a plant—leaf, stem, tuber, root, bulb, berry, and seed. The vegetable realm therefore includes grains, legumes, nuts, seeds, fruits, and sea vegetables; technically it excludes mushrooms, which are a fungus. In common usage, however, vegetables refer to fleshy, edible plants, which are more mineral rich and less sugary than fruits.
Waiting to Eat Fresh Vegetables Means Loss of Nutrients
According to research from Penn State, a bag of spinach that has been stored at 39 degrees Fahrenheit for eight days has lost half of its folate and carotenoids, compounds known for their importance in preventing birth defects, fighting heart disease and preventing blindness and cancer. "People should just eat (spinach) fast and not let it sit in their drawers," said Luke LaBorde, associate professor of food science at Pennsylvania State. "You have to accept the reality that it's a living plant, and you should eat it while it's fresh."

Organic Asparagus Cream From Piemonte - Nadia La Piana started making sauces and preserved vegetables in her kitchen. Now she and her husband Matteo have their own small facility near Torino where they employ their neighbors to transform the fresh harvest of Italian organic farmers into the finest vegetable spreads. Their asparagus cream is made from the freshest organic asparagus and organic extra virgin olive oil. Spread on bread or crackers, or use as a garnish on vegetable dishes.

A small snap green bean that is long and straight in shape, tender in texture, yet crisp and very tasty. It is also referred to as a baby French green bean. The name is often confused with the haricot bean, a small white dry bean commonly used to make baked beans.
Grown in the rustic region of Izmir, Turkey, in mineral-rich earth that imparts a fruity, pure taste. Ingredients: Whole Red Long Peppers, Water, Sea Salt.
Organic Sweet Pepper Cream, 4.4 oz jar
Organic Sweet Pepper Cream From Piemonte - Made from both red and yellow sweet bell peppers, this cream has a lively, piquant flavor. It can be used as a spread or garnish, but it really shines on pasta! Add it at the table after plain pasta has already been served on your plate.

Anaheim peppers are long thin green peppers that are very mild and often used when making "Chile Rellenos." They have a tough skin which peels off easily if you first char them over a flame, then steam them in a paper bag for several minutes.

More closely related to turnips than to broccoli, raab (also known as rapini or broccoletti) packs a mustardy bite. Quickly steam, stir-fry, braise or boil this pungent green to add intensity to potatoes and pasta or to complement stronger flavors or garlic, chili and ginger. Available in winter.

Sweet corn, which is a good source of vitamin A, manganese and potassium, is often considered to be a vegetable, rather than a grain. This confusion is probably due to the fact that it is eaten fresh like a vegetable.

In the United States, cucumbers are mainly eaten raw in salads or pickled. In Asia, they are cooked, as they were in the United States until this century. To make them more digestible, slice in half lengthwise and scoop out and discard the seeds.

Organic European Cucumbers, each
This foot-long slicing cucumber is pricier and less flavorful than other varieties, but it has less conspicuous seeds, a thinner skin, and a plastic wrapper--instead of a wax coating--to improve shelf life. All of this saves preparation time, since there's no need to peel or seed the cucumber before slicing it.
A variety of the Asian eggplant characterized by their long, thin shape and light purple coloring, which may become dark purple as it matures. They have a deliciously sweet meaty flesh, tender skin, and are seedless, which makes them highly desirable for numerous recipes. They are similar to a Chinese eggplant except they are not quite as long or as light colored. Since Japanese eggplants are highly perishable, store in a refrigerator for a week or less.
Organic Endive and Radicchio
Organic Belgian Endive, Red, 1/2 lb
Red endive is a cross between white endives and Treviso, a red Italian chicory similar in shape to the hearts of romaine lettuce. Endive (pronounced ON-DEEV) is the second growth of the bud at the top of a chicory root. The first growth takes place in the field, where the chicory plant grows from seed. The second growth takes place in the controlled conditions of a dark, cool, humid forcing room.
Organic endive works well in salads, braised as a side dish, or as a colorful, nutritious and low-calorie substitute for crackers for dips and appetizers.
Organic Belgian Endive, Green, 1/2 lb
Small, cigar-shaped head of cream-colored, tightly packed, slightly bitter leaves. Organic green endive (pronounced ON-DEEV) is grown in complete darkness to prevent it from turning green, using a labor-intensive growing technique known as blanching.

Small round red head, popular in Italian cuisine. May be used fresh in salad or roasted on the grill.
(Summer-Fall) Okra is a small green vegetable pod, elongated in shape, that contains numerous seeds which release a sticky substance when cooked. Okra is commonly used as a thickener for soups and stews. It is an important ingredient in making gumbo but is also used in other dishes such as soups, stews, vegetable and meat dishes, or salads where it may be boiled, steamed, braised, sauteed, or fried. If cooked in a metal pot, it will turn black, so use porcelain, glass, clay, or enamel pans when preparing this tasty vegetable.

Organic Snow Peas, lb
You eat these whole, pod and all. They're often stir-fried very briefly (no more than a minute), but they're also good raw. They're easy to prepare, just wash and trim the ends. Some people string them as well, but that's not necessary.

These make exquisite garnishes, but they can also be stuffed with fillings and fried, or else sauteed very briefly and put into omelettes or quesadillas. They don't store well, so try to use the blossoms soon after you get them.
Sweet dumpling squash are fairly small, so you can cut them in half, bake them, and serve each half as an individual portion. The flesh is sweeter and drier than that of other winter squash, and the peel is soft enough to be eaten.
