Smaller size, red skin, red flesh. Very sweet and can be eaten raw. Smaller size makes them great for kids! Best used in recipes that call for mashed or grated sweet potatoes such as pies, cakes and breads.
Organic Jewel Yams, lb
The current Queen of sweet potatoes, was developed by North Carolina State University. Jewel is still the leading commercial variety planted in North Carolina. The variety is a yam-type (moist, soft, yellow-fleshed when baked) with a light copper skin and orange flesh. They are moderately short, chunky roots.

This variety is an old-fashioned sweet potato with a golden yellow skin at harvest time which fades to buff or tan after storage. The flesh color ranges from creamy white to bright yellow with an occasional pink variegation. It has a dry, mealy flesh.

Daikon greens are very high in calcium, iron, and vitamin C and taste terrific. Cut into thin strips and add to stir-fries and soups.

With their crisp texture and peppery flavor, raw radishes are great in salads and on crudite platters. They can also be cut into attractive garnishes.
Organic Horseradish Root, lb
This is a very pungent brown root that's usually peeled and grated to make a condiment for meats. Its intense flavor and aroma dissipate quickly when exposed to air, so it should be grated just before serving or mixed with something sour (like vinegar, lemon juice, or beet juice) to lock in the heat. It's easiest to use a blender or food processor to grate it. Fresh horseradish is surprisingly potent, so make sure your kitchen is well ventilated, wear rubber gloves, and don't rub your eyes.
Turnips can be eaten as a snack, cut up and added to a salad, other vegetable dishes, soups and stews, or they can be cooked and eaten mashed or sliced as a side dish. They can be boiled, baked, braised in a stock, steamed, stir-fried, or roasted, but should not be overcooked, retaining some crunch to the vegetable. Turnips can also be pickled. They generally store well and can be kept in a refrigerator wrapped in plastic with air holes for one to three weeks. If blanched, they can be frozen and kept for longer periods of time.
The leafy part of the turnip root that is served as a vegetable green. The greens are harvested when the turnip is young and tender, resulting in a tender, succulent green. Turnip greens can be sauteed or steamed and added with other ingredients such as meat and vegetables to become a tasty side dish. Milder than mustard greens.
A root vegetable that looks like a turnip but is slightly larger and has a coarser texture, which makes it hard to cut. It is sometimes called a Swede or a Swedish turnip but is actually from the cabbage family. The rutabaga's skin is pale yellow with tints of purple covering a pale yellowish-orange flesh that provides a slightly sweet flavor and a brighter orange color when cooked. The flesh is firm textured and very hard in consistency, making it difficult to cut.
Rutabagas can be boiled, baked and sauteed.
Kohlrabi is a member of the cabbage family grown for its swollen, turnip-shaped portion of the stem which rests on the ground. The edible portion can be white, purple or green with a creamy white interior. They are eaten raw in salads or can be cooked like a turnip.
These are like carrots, except that they're cream colored and never served raw. Northern Europeans like to add them to stews, but they can also be pureed or served as a side dish.
A flavorful, starchy tuber whose varieties range in shape from being small and kidney shaped to a larger barrel shape, similar to a sweet potato. Their length can vary from less than 5 inches up to more than a foot. They have brown, hairy skins and smooth flesh that might be very white, grayish-white or cream colored and is sometimes marked with small dark specks. Taro can be cooked in the same manner as a potato, including baking, boiling, frying, steaming and sauteing, and has a nut-like, potato flavor. The larger taro roots have a sweeter flavor but are drier than the smaller roots. They are eaten as a vegetable or added to soups and stews. Taro is a key ingredient in Hawaiian Poi.
Fresh Organic Water Chestnuts, lb

Rinse fresh water chestnuts well with water to remove any mud. Slice off the top and bottom and go around the middle with a paring knife. Peel the brown skin off to reveal the white flesh. Cut, chop to your desired taste. Place in a bowl of water to prevent discoloration. Peeled water chestnuts can be frozen up to a month.
The Spanish named the ubiquitous Native American sunflower girasol, because from dawn to dusk its blossoms turn east to west following the sun. Presumably, this word sounded like Jerusalem. That, together with the tuber's sweet, almost artichoke like flavor when cooked, is probably how it earned the unlikely name of Jerusalem artichoke. Its edible tuber looks like a small potato but with multiple knobs like ginger. The flesh is sweet, crisp, and white or yellow, and is delicous steamed or served raw in salads.
