How Sweet It Is!
Organic sweeteners come in many shapes and sizes, and it seems like each person has a different preference. Experiment with everything from raw sugar (used much like refined white sugar in recipes) to agave nectar (a honey-like syrup with a low glycemic index), and see what works best with your health and lifestyle.
Hop flavored, and therefore intensely bitter, barley malt was sold "strictly as a sweetener" during Prohibition. This "sweetener" however, would have ruined anything but home brew. Sprout whole barley, roast it, and then extract it into liquid form, and you've got barley malt syrup. Combine the syrup with hops and ferment with yeast, and the result is beer.
Barley malt is the least expensive of quality natural sweeteners. Compared to honey, barley malt syrup is less dense and less sweet.
Health Benefits: Barley malt is mostly carbohydrate, and though it contains small quantities of vitamins and minerals, the amount is negligible. Its primary sugars are maltose, and so like rice syrup, it more moderately impacts blood sugar leels than sugar, maple syrup, and honey. It is therefore more healthful.
Store barley malt syrup in a glass or plastic container in a cool, dark cupboard. If stored for a long time (more than 12 months) or in a warm place, the malt may ferment. A sign of fermentation is bubbles percolating up through the malt. Should this occur, refrigerate and use quickly, or discard if it has an unpleasant aroma.
