Raw Food, Snack Bars, and Raw 'Chocolate'

"We were planning to spend a month that summer in Hawaii, and our first thought was that it would be warm there, so we wouldn't be cold without our usual cooked foods. Our second thought was that a lot of great fruits grow in the Islands. We made the decision to eat only raw fruits and salads for our month away.
At the end of that month, we felt healthier than we ever had in the past. We were sleeping two hours less each night, and our energy level was the best it had been in our lives. We were exercising several hours a day, and the positive impact on our bodies was undeniable. We have been eating raw since that trip."
—Roxanne Klein, in her cookbook Raw (written with Charlie Trotter)

Raw foods have different effects on different people. Be sure to do plenty of research before embarking on a raw food cleanse or diet, listen to your own body when trying out any new foods, and consult with a qualified health professional if you have any questions.

About Living Nuts
Countless nutritionists and living foods experts have all stressed that it is essential to germinate (soak) all nuts and seeds for at least 12 hours before consuming them. Germination is a process where all the vitamins, minerals, proteins and essential fatty acids (EFAs) that are dormant in nuts and seeds begin to activate and multiply. Germination also eliminates certain toxins and acids within the dormant nuts and seeds that would interfere with digestion. The germination process is the reason why "living nuts" are so light and easy to digest. After the germination, all-organic live food ingredients are added to the nuts, then they're dehydrated at a low temperature (110 F to 115 F) for up to five days. This preserves all the nutrition within the nuts and creates optimum flavor and digestibility. This is different than roasting nuts which is much quicker, but destroys vital enzymes and minerals. "Living nuts" are the perfect bridge for those looking to eat more healthy foods or switch to an all 'raw' diet without compromising taste.
