A smooth and buttery extra virgin olive oil with hints of apple.
Mission oilve trees were introduced in California by seeds brought from San Blas, Mexico, in 1769, and planted at Mission San Diego by Junipero Serra and by Don Jose de Balves. The trees were soon in production at all the missions along the California Coast. As agricultural development of the state began, commercial olive orchards were planted, the nursery stock for which was grown from cuttings secured from the various missions.

Organic Chianti Wine Vinegar, 8.45 oz
Organic Chianti Wine Vinegar made by adding the juice of freshly pressed organic Chianti grapes to organic Chianti wine vinegar. The combination is then aged in wooden casks for a year to produce a dramatic flavor. It is called uvaggio, meaning grape fortified or extra grape. Made in the Chianti hills of Tuscany by Giuseppe Giglioli. A potent vinegar; use less than you would an ordinary wine vinegar.
Organic Sweet Grape Vinegar, Italian biodynamic, 8.5 oz
This unique vinegar is produced by the Guerzoni family in the Italian region of Emilia Romagna. The process begins with the ancient craft of slowly cooking fresh grape must (in Italian, Mosto Cotto) in huge kettles and reducing it to a rich liquid. The cooked must is fermented and acidified in oak casks, and aged for about seven years. Selected grapes (Salamino, Fortana, Trebbiano Bianco and Lancellotta) produce a vinegar that is high in sugars and low in acid. Use as a condiment at the table on meats and roasted vegetables. Delicious on salads and in marinades.
Organic Apple Cider Vinegar, 16 oz

Traditionally made cider vinegar is nothing but freshly pressed apple juice allowed to ferment over a four to six-week period at room temperature. It contains no added clarifiers, enzymes, or preservatives. Rich with sediment and strongly acidic, a quality cider vinegar tastes like the apples from which it was pressed.
Health Benefits: Vinegar immediately increases circulation and therefore moves stasis, be it emotional or physical. Due largely to its mineral content (especially potassium) and its ability to normalize the body's acid-alkaline balance, organic apple cider vinegar has long been valued as a versatile folk remedy. Internally it cleanses the digestive tract; externally, it disinfects any skin wounds or abrasions. Its acidity reportedly aids in the removal of calcium deposits from joints and blood vessels without affecting normal calcium levels in the bones and teeth.
In the best-selling book Folk Medicine, Dr. DC Jarvis prescribes and old Vermont kitchen tonic - two teaspoons of apple cider vinegar and a teaspoon of honey in a cup of water - to treat chronic fatigue, headache, arthritis, colitis, obesity, food poisoning, kidney inflammation, insomnia, high blood pressure, dizziness, sore throat, and a host of other ailments in both humans as well as farm animals. Several centuries later, the effectiveness of this remedy is still attested to by countless individuals. It is a treatment, however, that I recommend only as a short-term symptomatic cure, since prolonged use does not address the root of the problem. As Paul Pitchford, teacher and author of Healing with Whole Foods, warns, regular use of a vinegar remedy can lead to a kind of vinegar dependency. Furthermore, he advises, it is contraindicated in cases of weak digestion marked by loose, watery stools; general deficiency (frailty); muscular injury or weakness, including rheumatism.
Use: Apple cider vinegar is used in dressings, sauces, condiments, marinades, and pickles.
