Grass Fed Buffalo
The low fat content of buffalo - it's 98% fat free - insures that buffalo will cook quickly. The basic principle of cooking buffalo is 'slow and low'. With that in mind, feel free to substitute buffalo in any red meat recipe for remarkable flavor and nutrition.

Our meats and fish, and most Kathleen's Kitchen items (except salads, dips and sushi), are frozen - these items will arrive frozen when packed in dry ice. Without dry ice, these items will arrive slightly thawed. We recommend all frozen foods arrive frozen, so please add dry ice to your order. If we feel dry ice is needed due to the nature of your delivery, we will add it to your order.

Many people feel that buffalo is the most flavorful meat they have ever tasted. In addition to its rich, sweet flavor, it is naturally tender. Buffalo meat is best-prepared medium rare. One-inch steaks or burgers require approximately four minutes per side on the grill or under the broiler. Roasts are best cooked slowly at a low temperature (275 F).

Grass-fed Animals Never Leave the Farm
They graze on pasture or stored forage their entire lives, and their growth is determined by the quality of this forage, not synthetic growth hormones. Raising cattle and buffalo by pasture alone requires a great deal of knowledge and skill. Even though buffalo are extremely hardy and tolerate the limited forage available in the winter months by slowing their metabolic rates, careful pasture management is needed to ensure high-quality forage. For this reason, some people who raise grass-fed animals refer to themselves as 'grassfarmers' instead of ranchers.

Full Circle is a family ranch in Williams, Oregon, where an exclusively grass-fed herd of 85 bison grazes organic pastures from spring through fall, and is fed 'no-spray' hay in the winter. The majority of their home-herd consists of bison cows that bear a calf each year, and live to be over 20 years old! The young bulls provide the meat, except for the few that are kept for breeding. All of the bison are raised without antibiotics or hormones. We have the utmost respect for the health and happiness of our bison and the customers we serve, as is proven by the superior quality of our meat.
There are about 300,000 bison in the United States today. Raising bison brings people, animals, and the land back to a healthy balance - thus their name, Full Circle Bison Ranch.

Pasture-raised animals help us recreate a diet that is in harmony with our bodies. Grass-fed buffalo meat and beef is naturally lower in total fat than grain-fed, but it’s much higher in helpful fats like omega-3 fatty acids. A diet with abundant omega-3s decreases the likelihood of having high blood pressure, irregular heartbeat, and heart attacks, but less than 40 percent of Americans consume an adequate amount. Grass-fed buffalo meat and beef is also a rich source of conjugated linoleic acid, an important cancer-fighting fat, and vitamin E.

One more benefit of pasture raising animals is to the environment. Grassfarmers have no need for gas-guzzling farm equipment used for growing and transporting grain, relying instead on a pickup, a tractor, and haying equipment. It takes ten times more fuel to raise cattle on grain than grass, not to mention the fossil fuels used in the form of nitrate fertilizers to grow commercial grain.
