Mission oilve trees were introduced in California by seeds brought from San Blas, Mexico, in 1769, and planted at Mission San Diego by Junipero Serra and by Don Jose de Balves. The trees were soon in production at all the missions along the California Coast. As agricultural development of the state began, commercial olive orchards were planted, the nursery stock for which was grown from cuttings secured from the various missions.

For the past several decades, coconut oil (the fatty acids pressed from the coconut meat) was falsely accused of raising blood cholesterol levels. Yes, it is a highly saturated fat--meaning that it is solid at room temperature--but it's an exceptionally healthy fat for vegetarians and people with low fat / cholesterol consumption. It and palm oil are the only unrefined vegetarian fats that are not denatured when heated above 240 degrees.

Health Benefits: Unrefined coconut oil is lower in calories than most fats and oils. Moreover, it is over 50 percent medium-chain fatty acids, the kind that are not stored as fat. Rather, the body metabolizes medium-chain fatty acids into energy. This makes coconut oil a favorite food of dieters and athletes.

Possibly, however, coconut oil's most remarkable property is that it's one of the few significant plant sources of lauric acid. This medium-chain fatty acid, which is also found in human milk, enhances brain function and the immune system. Unrefined coconut oil is free of the toxic trans-fatty acids found in hydrogenated and refined oils. It does not clog the arteries or cause heart disease.

Used for baking, pan-frying, and deep-frying, coconut oil is a superior oil. It has a toothsome texture with a pleasant mouth feel. Unlike other oils used for deep-frying it is reusable because it remains stable and does not form toxic trans-fatty acids. When heated to high temperatures, however, coconut oil bubbles and froths. To prevent it from bubbling over, deep-fry in a large container and tend carefully. In some applications using a fry-pan/pressure cooker, the type by Kuhn-Rikon, alleviates this problem.

It's easy to substitute coconut oil for shortening, lard, or butter in pastries. However, reduce the coconut oil measurement by 25 percent because it is almost pure fat. It's more concentrated than shortening, lard, and butter, which contains upwards of 20 percent moisture and/or milk solids.

This unique vinegar is produced by the Guerzoni family in the Italian region of Emilia Romagna. The process begins with the ancient craft of slowly cooking fresh grape must (in Italian, Mosto Cotto) in huge kettles and reducing it to a rich liquid. The cooked must is fermented and acidified in oak casks, and aged for about seven years. Selected grapes (Salamino, Fortana, Trebbiano Bianco and Lancellotta) produce a vinegar that is high in sugars and low in acid. Use as a condiment at the table on meats and roasted vegetables. Delicious on salads and in marinades.

Traditionally made cider vinegar is nothing but freshly pressed apple juice allowed to ferment over a four to six-week period at room temperature. Several centuries later, the effectiveness of this remedy is still attested to by countless individuals. It is a treatment, however, that I recommend only as a short-term symptomatic cure, since prolonged use does not address the root of the problem. As Paul Pitchford, teacher and author of Healing with Whole Foods, warns, regular use of a vinegar remedy can lead to a kind of vinegar dependency. Furthermore, he advises, it is contraindicated in cases of weak digestion marked by loose, watery stools; general deficiency (frailty); muscular injury or weakness, including rheumatism. Use: Apple cider vinegar is used in dressings, sauces, condiments, marinades, and pickles.
